The right balance of lean and fat is the secret of the flavour and fragrance of this coppa (capocollo). A careful maturing gives it its consistency and softness on the palate. Delicately spiced and hand-strung according to the ancient tradition, coppa has a pleasantly full-bodied flavour.
Slices have a vivid red colour and pinkish-white streaks.
